Crispy piping hot spicy chicken wings might just be the best finger food on the planet. Here’s a recipe for seriously crispy chicken wings with creamy roasted garlic sauce that will knock your socks off.
I find myself craving chicken wings at least once a week, and I’m sure I’m not the only one.
If you’re on the same boat, give this recipe a try. The wings come out so crunchy and with lots of flavor.
The trick is to season the wings at different stages.
And the garlic sauce… oh the garlic sauce. I could eat it with a spoon.
Slowly roast an entire garlic bulb, then mix with sour cream, a touch of mayo, a pinch of sugar, and S&P. Full recipe below.
Preheat the oven to 200 C / 392 F. Cut the bulb at the end that doesn’t have left overs of the root.
Set the garlic on a piece of foil and drizzle with oil, preferably olive oil. Roast for about 35 minutes.
The garlic should be soft like butter. Roasted garlic is one of the easiest way to take your favorite dishes to the next level.
To make the roasted garlic sauce, squeeze out the garlic cloves.
Mix with sour cream, mayo, sugar, S&P. Let set in fridge.
The sauce can be made beforehand. Just take it out when ready to use.
Prep chicken wings by separating the drumette from the flat. You can also take off the tip if you like it that way.
Give the wings a rinse, and pat dry.
Season with salt & pepper.
For the crunchiest coating, use Panko breadcrumbs. Season Panko breadcrumbs with salt and dried parsley.
Coating the wings with all purpose flour before coating with Panko will help the Panko stay put on the chicken. Season all purpose flour with spices like garlic powder, onion powder, salt, pepper, cayenne powder, smoked paprika.
Beat eggs with some water and start coating the wings.
First coat with all purpose flour, then dip in eggs, then the Panko mix. Set aside. Repeat for all wings.
On med heat, bring some vegetable oil to temperature. Shallow fry for 3 minutes, flip, and fry for another 3 minutes.
Until golden brown and cooked through. The surest way to know if it’s done is to sacrifice one. Open it up and take a look. Adjust cooking time if needed.
Drain on paper towels.
Serve piping hot, with roasted garlic sauce on the side.
