Easy oven roasted red beets with rosemary and ginger recipe

Prep Time: 5 minutes

Cook Time: 40 minutes

Total Time: 45 minutes

Serves: 4

Ingredients

  • 3 fresh red beets, peeled
  • 1 knob of ginger, sliced thinly
  • 3 sprigs of rosemary
  • Olive oil, about a tbsp
  • Kosher salt or regular table salt for seasoning
  • Other
  • Aluminum foil

Instructions

  1. Preheat oven to 200 C / 390 F
  2. Slice red beets in even chunks
  3. In an ovenproof dish, toss together beets chunks, ginger slices, rosemary sprigs, olive oil and salt
  4. Cover with aluminum foil
  5. Roast cover to 30 mins
  6. Raise temp to 250 C / 480 F
  7. Remove cover and roast for another 10 mins
  8. Taste and adjust seasoning if needed
  9. Serve hot or let cool down and store. Reheat in microwave when ready to eat.
  10. Enjoy!

Notes

Hot tip: frozen ginger works well with this recipe.
