I find myself craving chicken wings at least once a week, and I’m sure I’m not the only one.

If you’re on the same boat, give this recipe a try. The wings come out so crunchy and with lots of flavor.

The trick is to season the wings at different stages.

And the garlic sauce… oh the garlic sauce. I could eat it with a spoon.

Slowly roast an entire garlic bulb, then mix with sour cream, a touch of mayo, a pinch of sugar, and S&P. Full recipe below.

Preheat the oven to 200 C / 392 F. Cut the bulb at the end that doesn’t have left overs of the root.

Set the garlic on a piece of foil and drizzle with oil, preferably olive oil. Roast for about 35 minutes.

The sauce can be made beforehand. Just take it out when ready to use.

Prep chicken wings by separating the drumette from the flat. You can also take off the tip if you like it that way.

Season with salt & pepper.

For the crunchiest coating, use Panko breadcrumbs. Season Panko breadcrumbs with salt and dried parsley.

Coating the wings with all purpose flour before coating with Panko will help the Panko stay put on the chicken. Season all purpose flour with spices like garlic powder, onion powder, salt, pepper, cayenne powder, smoked paprika.

Beat eggs with some water and start coating the wings.

First coat with all purpose flour, then dip in eggs, then the Panko mix. Set aside. Repeat for all wings.

On med heat, bring some vegetable oil to temperature. Shallow fry for 3 minutes, flip, and fry for another 3 minutes.

Until golden brown and cooked through. The surest way to know if it’s done is to sacrifice one. Open it up and take a look. Adjust cooking time if needed.

Ingredients

  • 1 kg chicken wings, cut into sections
  • 1 cup all purpose flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • a dash of cayenne powder (optional)
  • salt
  • pepper
  • 3 large eggs
  • 3 cups plain Panko crumbs (available at Kong Hing)
  • 6 tsp dried parsley in total; 2 tsp per cup of Panko
  • 1 cup vegetable oil for frying
  • Creamy roasted garlic sauce
  • 1 whole garlic bulb
  • 4 tbsp sour cream
  • 1 tbsp mayonnaise
  • 1/2 tsp dried parsley
  • pinch of salt
  • 2 pinches of sugar
  • a drizzle of oil
  • aluminum foil

Instructions

  1. Preheat your oven to 200 ° C / 392 ° F.
  2. Cut garlic bulb at the end that doesn't have the root. Set it on a piece of aluminum foil, drizzle with some vegetable oil. Make a little bunch and place it in the oven.
  3. Roast garlic for 30 - 35 minutes.
  4. It the mean time, wash the chicken wings, rinse and pat it dry.
  5. Season wings with 1 tsp of salt and 1 tsp of pepper.
  6. Set the wings aside.
  7. Place one bowl and two plates in front of you. You will also need something to put the wings on when they are done, like a cutting board.
  8. In the bowl, beat eggs with a dash of water. Set aside.
  9. One a plate, place all purpose flour, garlic powder, onion powder, one tsp salt, pepper and a dash of cayenne. Mix using a fork.
  10. On another plate, put one cup of panko, 1 tsp salt, and 2 tsp of dried parsley. Mix.
  11. You'll need three of this panko mix in total. Make one batch at a time to avoid clumping.
  12. Working with one wing at a time. Cover the chicken wing with flour first, make sure it is coated on all sides.
  13. Dip in egg making sure it is well coated.
  14. Then, drop in the panko mix, and coat well on all sides gently pressing the panko on to the wing.
  15. Repeat until all wings are coated.
  16. Place wings in the fridge to set.
  17. The garlic should be done. Take it out of the oven, remove from foil and let cool down.
  18. When the garlic is cool enough to touch, squeeze the cloves into a small dish/bowl/cup...
  19. The cloves will feel like butter.
  20. Mix garlic with sour cream, mayo, parsley, sugar, salt, and pepper.
  21. Cover and refrigerate for at least 30 minutes, preferable an hour.
  22. O med heat, add one cup of vegetable oil.
  23. The oil is ready to use, when a tiny bit of panko gets surrounded with big active bubbles.
  24. Fry wings in small batches.
  25. Fry 3 minutes, turn and fry another 3 minutes, until nicely browned.
  26. Take them out and drain on paper towel..
  27. Repeat for all wings, this will take about 20 min.
  28. Serve these seriously crispy chicken wings with the roasted garlic sauce on the side.
